Pancakes look simple, which is exactly why they are hard to do well. Ours are made from scratch batter, rested so the leavening does its work, and cooked on a properly heated griddle so they rise tall instead of spreading flat.
The result is a stack that stays light through the last forkful — crisp golden edges, soft centre, and none of the rubbery density that comes from batter poured out of a jug. They are a fixture of breakfast and brunch at Cravings And Delight, served alongside eggs, bacon and coffee.
Fresh batter, the right rest, and a griddle at the right temperature. Cook them too cool and they spread; too hot and the outside sets before the inside rises. We cook each stack to order so they reach the table hot, which is when pancakes are at their best.

We open at 9:00 AM on Friday, Saturday and Sunday and at 10:00 AM Tuesday through Thursday, which makes us an easy brunch stop for Chappelle, Desrochers, Paisley, Glenridding Heights and Heritage Valley Town Centre.
