The three egg omelette is the workhorse of our breakfast menu. Three eggs give it enough substance to carry a real filling, and we load it with farm vegetables and cheese rather than a token sprinkle, so every forkful has something in it.
Each omelette is cooked to order on the flat-top and folded while the centre is still soft, which is the difference between a tender omelette and a dry one. Served with toast and sides, it is a breakfast that gets people through a full morning of work.
We cook omelettes over steady heat and fold them before the eggs overcook, so the outside is set and the inside stays tender. Fillings are added hot and the cheese melts in the fold rather than sitting on top of a dry sheet of egg.
